The Thomas Vaughan "Gold Standard" Welsh Cake
Every grandmother from Pontypridd to Pembrokeshire has their own "secret" ingredient, but we believe the best Welsh cakes are all about the texture—light, slightly crumbly, and golden brown.
The Ingredients:
225g Self-raising flour
110g Salted butter (cold and cubed)
75g Caster sugar (plus extra for dusting)
1 tsp Mixed spice (that classic Welsh aroma!)
A generous handful of Sultanas or Currants
1 Large free-range egg, beaten
The Method:
The Crumble: Rub the butter into the flour and spice until it looks like fine sand.
The Mix: Stir in the sugar and fruit, then add the egg to form a soft dough.
The Shape: Roll out to $1/4$ inch thick on a floured surface and cut into rounds.
The Sizzle: Cook on a medium-heated griddle for about 3 minutes per side until golden.
The Finish: Dust with sugar while still warm!
